Grapes for our 2016 Signature Series Botrytized Chenin Blanc were 100% Botrytized, which gives this wine its unique flavors. The result is a rich dessert wine with an immense bouquet of honey, pears, and apricots, with whispers of toasted almonds. Aromas of the bouquet transfer directly to the palate. A vibrant backbone balances the residual sugar for an extended floral finish of sublime elegance.

Cherry Hill Vineyard. Growing Conditions : Forty-plus year old vines growing on a steep southern slope with shallow sandy soils in the southernyakima Valley produced the fruit for our 2006 Botrytized Chenin Blanc. The fall of 2006 began with non-typical light rains that assisted the spread of noble rot. The warm moist conditions,rare in easternWashington allowed more than 60% of the berries to be botrytized,thereby concentrating the sugars and the flavors which impart a honey and nutty character.
The grapes were hand picked on a very cool morning in early November and whole cluster pressed. The resulting juice was whole cluster pressed to preserve the delicate aromas and flavors of the varietal.Cold fermentation in stainless steel tanks further preserve the flavors with the firm acidity being balanced perfectly with considerable residual sugar.
